Hey Friends,

Vancouver Cake Designer, Lisa Lyttle here…Just wanted to share with you some of the cakes I made this weekend.  It was fun and challenging like no other.  This weekend was the first time I had 2 wedding cakes due at the same time, plus 2 other Vancouver Cake orders on top of it!  Phew!  I have to say, I’m glad it’s over.  It seems that these days I get a lot of sleepless nights, either because I’m designing throughout the night or stress keeps me awake.

My Hydrangea Wedding Cake turned out great!  It was exactly how the sketch was drawn.  There were a ton of Oohs and Ah’s when delivering it to the reception site.

Speaking of delivery…there’s nothing in this world that causes more stress for me. I panic when the cake sways back and forth in the car, I fear the worst….that it might topple over, or it gets severely damaged, so much so that I can not fix it at the wedding hall.  This is what keeps me up at night.  DELIVERIES!  One day that stress alone will kill me.  So…before that happens, I need to hire a delivery person. Someone that I can build a relationship with and that I can completely trust to deliver and set up my cake with care and gentleness.  If you know someone in the Vancouver area that can be a fantastic delivery person once in a while, please let me know!!!

Hey Cake Eaters!

Vancouver Cake Designer, Lisa Lyttle here…hope you all had a fantastic weekend!!!

Well, I need to tell you all about mine!  I sponsored an event to support the Make and Break it Art Foundation at Telus World of Science in Vancouver, BC, called Art World Expo 2012!  It was absolutely fabulous!  About 1000 attendees and over 100 vendors came to the event…Bif Naked performed!  There was a Body Art Competition and a Fashion Show!  Lots of fun!

I personally made 1000 colourful cupcakes for the event, plus had 7 cakes to make on top of that!  Talk about stress!!!  LOL!  Next time I’m hiring some helpers!!

I have to say, I would consider myself to be quite a strong person, mentally and emotionally that is.  That being said, this past weekend got the best of me.  I had less than 20 hours of sleep in 5 days, by the 5th day I couldn’t take it anymore and broke down.  For once in my life I felt defeated, hopeless…was too tired and weak to move, walk, or work on my cakes and I had 3 cakes to finish for some Vancouver clients. The thought of my cakes not being finished when the client arrives was NOT an option, but unfortunately it crossed my mind and gave me tremendous stress ad anxiety.   What was I to do?  Well, I’m proud to say, I succeeded!  I took a 5 hour nap and started my cakes at 3:30am and finished at 9am for pickup.  Still can’t believe it!  Not sure how I did it, but I did!!  This morning, I slept until 10:30am…I NEVER do that!!!  Obviously I needed it!  Haha!

It was such a rewarding weekend on many levels!  The biggest challenge I have ever given myself and I succeeded!  Maybe I can take over the world!  LOL!

Back in October, I had a lovely Bride-to-be come in to Vancouver Cakes with her wonderful mother for a wedding consultation and taste testing. They were planning a classy and elegant wedding however, they wanted to do something really fun and out of the ordinary when it came to their cake.
The Bride and Groom both love Slurpees and spent a lot of time ordering them while they were dating.  So they came up with an idea to do Slurpee looking cupcakes with a small cake on top for the cake cutting ceremony.  I laughed and thought the idea was super cute!
Today, I arrived at the reception.  It was beautifully decorated, her colours where white, blue and orange.  I should have taken a photograph of the centrepieces as they were stunning!  Very elegant and Classy!
The bride requested to have the Slurpee Colours Orange, Green and Blue.  She supplied Slurpee Stickers and Red edible lickerish to resemble straws and asked me to also made a Black 8″ Cake with scrollwork and piping details in her 3 chosen colours.  The cupcakes were very playful and fun and the cake was a little more elegant and had a sparkly heart topper on it.  The colours are very vibrant, almost florescent, but it matched her wedding reception perfectly!!
So there you have it!  Now you know what a Slurpee Wedding looks like!

How to Make a Wine Bottle Cake by  Vancouver Cake Designer, Lisa Lyttle

It has been super busy making all these Vancouver cakes the last few days!  2 weeks ago, my girlfriend Andrea was at the spa and overheard some ladies talking about a party they were throwing for one of their husbands, they were in search for a cake!   Andrea not wanting to seem like she was eavesdropping but also wanting to inform them of Vancouver Cakes, politely interrupted their conversation and recommended Vancouver Cakes!  I LOVE my friends!  Thank you Andrea!!!!

Well one of the ladies contacted me later on that day and asked me if I could make a “Wine Bottle Cake”…I’ve never made one in the past but I don’t like to turn down profitable orders just because of something I never tried before, so I said, No Problem!  I can definitely make that for you!!  Gulp!  I figured I’ll take the order and wing it when the time comes to make her cake!!!  (That being said, I’m very confident in my abilities and if I truly felt I couldn’t do it, I would say so.)

Well the day has finally arrived to make cake!  I had quite a few orders this weekend already so I didn’t have a lot of time to think about how I would make the cake, I honestly didn’t think I would need that much time.  The cake turned out exactly how I envisioned in my head!!!  A great learning experience also, but when I make a wine bottle cake next time, I’ll do a few things differently.

Let me show you some pictures, then I’ll tell you how I made it and what I would do differently next time.

I do love this cake, and for my first attempt I think it turned out great!  The client loved it too!  She was very impressed!  My client’s opinion is the most important to me as I know I’m my own worst critic.

For the bottle, I grabbed a wine bottle in my liquor cabinet and dusted it with Corn starch and Icing Sugar.  I then rolled sugar paste over top (Burgundy) and cut it so that it was only on half the bottle.  I let this sit for a day.  I would recommend doing this at least 2 days in advance.  I didn’t have any issues with it, but just to be on the safe side.

For the Crate, I again used Sugar Paste (2 shades of Brown) and Cut them the shape of my cake.  Set them aside for a least a day.  I only let it sit for 10 hours, I would do it the same time I do the bottle next time-2 days in advance.  Also, when you cut the sides, wait 10-15 minutes then put your markings to make the wood grain, otherwise the sugar paste will be too soft and you’ll lose the markings.

For the shavings, I was originally going to use long coconut shreds…this would have worked just as well, however I wanted them to look more realistic so I shaved white chocolate.  The cake was Vanilla with Lemon Curd and Vanilla Buttercream, so coconut would have went nicely with that flavour as well!

I made the grapes and leaves 1 hour before the client picked up the cake.  That’s pushing it, normally I leave myself a little more time, but it all worked out.  :)

Next time I will customize my own label on the cake and print it on edible food paper, doing this will give the bottle a more ‘real’ effect.

To make the bottle shine so it looks like glass, I tinted piping gel dark burgundy and painted it on.  Next time I will find a way to use the piping gel or something else so I don’t get the brush strokes on it.

And that’s it!  I won’t lie, it’s a lot of work and prepping for a cake like this…but it’s very rewarding when it’s complete!

I now want to make a strawberries and champagne cake!  Mmm!  Strawberries, champagne bottle and the cake will be Vanilla, Strawberry Preserve with a Strawberry-Champagne buttercream…Mmm!  How summery!!
